How to Choose a Commercial Portable Fryer
5 min read
Oil capacity is the headline number, but recovery rate is what determines throughput. A fryer that drops temperature and takes too long to return will bottleneck your line regardless of tank size.
Decide between single and double tank early. Two smaller tanks let you separate products and keep flavours apart; one larger tank gives more continuous capacity for a single product.
Match fuel to your venue. Electric fryers need substantial dedicated circuits; propane fryers need regulated supply, clearance and ventilation.
Check the footprint against your line, including the space required for basket travel, oil filtering and safe draining.
Verify fire and ventilation requirements for frying at your location. Outdoor frying is frequently regulated separately from other cooking.
