How to Build a Bakery Setup in a Small Space
6 min read
Small-space baking is a scheduling problem as much as an equipment problem. Each stage — mix, proof, bake, cool — occupies space for a fixed period.
Start with the oven, because it sets the batch size everything else must match. A countertop convection oven running half-size pans defines how much dough is worth mixing at once.
Size the mixer to the oven, not to ambition. A mixer that produces more dough than you can proof and bake in sequence simply creates a queue.
Proofing on casters lets you move the bottleneck out of the working area between stages.
Plan vertically: racks and pan slides recover floor area that bench-mounted equipment consumes.
