Portable vs Full Commercial Kitchen Equipment
6 min read
Full-size commercial equipment is built around continuous duty in a fixed location with dedicated utilities and ventilation. Compact equipment trades some of that sustained capacity for mobility and a smaller footprint.
Compact equipment wins where the kitchen is temporary, where the space is fixed and small, or where you need additional capacity without a build-out.
Full-size equipment wins where output must be sustained all day, every day, and where the utilities and hood already exist.
Portable does not automatically mean suitable for every environment. Weight, fuel requirements, clearance and weather exposure all restrict where a unit can actually be used.
Check the specifications of the individual unit rather than assuming a category behaves a certain way.
